Usually, a happy medium seems kind of like a paradox or concession, but not in this case! Medium roasts are coffees that sit perfectly in the pocket between delicate and roasty. It's where we can find the coffee's sweet spot between flavors from the roasting process and flavors from the coffee beans themselves.

We began a subscription of Birchwood in 5 lb bags after trying a small sample. The roast level and flavor work well for my morning black coffee. There is sweetness you would find in a light roast but still dark enough for after dinner. Love it!
